Vegan Queso

diced tomatoes with green chiles

nutritional yeast

Instructions
- Soak the cashews in boiling water for at least 20 minutes.
- Drain the cashews and place them in a high-speed blender with the diced tomatoes, nutritional yeast, cumin, chili powder, turmeric, and salt.
- Blend for 30 seconds, scrape down the sides, then blend for another 30 to 60 seconds until smooth.
- If desired, heat the queso in the microwave in 10-second increments, stirring in between, until warm.
- Store leftovers in a covered container in the refrigerator for up to 5 days.
