Vegan Queso

Ingredients

  • 1 cup raw cashews
  • 1 10-ounce can diced tomatoes with green chiles
  • ¼ cup nutritional yeast
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon ground turmeric
  • ¾ teaspoon salt

Instructions

  1. Soak the cashews in boiling water for at least 20 minutes.
  2. Drain the cashews and place them in a high-speed blender with the diced tomatoes, nutritional yeast, cumin, chili powder, turmeric, and salt.
  3. Blend for 30 seconds, scrape down the sides, then blend for another 30 to 60 seconds until smooth.
  4. If desired, heat the queso in the microwave in 10-second increments, stirring in between, until warm.
  5. Store leftovers in a covered container in the refrigerator for up to 5 days.
