Yuca Fries

Instructions
- Boil yuca in a large pot of water for about 20 minutes until fork tender.
- Drain and let the yuca cool until manageable.
- Cut the cooked yuca into strips, about ½-inch thick and 4-inches long, discarding the fibrous core.
- Heat the vegetable oil in a large pot to 350°F.
- Carefully drop the yuca strips into the oil and fry for about 5 minutes until crispy.
- Remove the fries and place them on a paper-towel lined plate.
- Toss the fries in salt and any additional spices, then serve hot.
