Ingredients

The fries

  • 3 pounds yucca root
  • Kosher salt
  • Neutral oil (such as avocado oil or grapeseed oil)

For serving

  • Aji Verde

Instructions

  1. Slice off the ends of the yucca root and cut them into 4-inch rounds.
  2. Peel the yucca, cutting off the least amount of flesh as possible, then cut into matchsticks.
  3. Bring a medium pot of salted water to a gentle simmer and add the yucca matchsticks, cooking for about 20 minutes.
  4. Drain the yucca and transfer to paper towels to dry.
  5. In a medium saucepan or Dutch oven, heat about 1-inch of neutral oil.
  6. Fry the yucca in batches for 2 to 3 minutes on each side until medium golden brown.
  7. Transfer the fried yucca to paper towels to drain excess oil and sprinkle with salt.
  8. Serve the yucca fries alongside aji verde.
