Instructions
- Slice off the ends of the yucca root and cut them into 4-inch rounds.
- Peel the yucca, cutting off the least amount of flesh as possible, then cut into matchsticks.
- Bring a medium pot of salted water to a gentle simmer and add the yucca matchsticks, cooking for about 20 minutes.
- Drain the yucca and transfer to paper towels to dry.
- In a medium saucepan or Dutch oven, heat about 1-inch of neutral oil.
- Fry the yucca in batches for 2 to 3 minutes on each side until medium golden brown.
- Transfer the fried yucca to paper towels to drain excess oil and sprinkle with salt.
- Serve the yucca fries alongside aji verde.
