Ingredients

The fries

  • 2 large avocados, firm but just ripe
  • 6 Tbsp all-purpose flour
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp salt
  • ½ tsp freshly ground black pepper
  • 2 large eggs
  • 1 ⅓ cups panko bread crumbs
  • 2 cups vegetable oil

Cilantro lime sauce (optional)

  • ¾ cup whole milk Greek yogurt
  • 2 ½ Tbsp finely chopped cilantro
  • 1 Tbsp fresh lime juice
  • 1 tsp minced garlic
  • 1 ½ tsp honey
  • ¼ tsp chipotle pepper (optional for spicy)

Instructions

  1. Whisk together the flour, cumin, chili powder, salt, and pepper in a shallow dish.
  2. In a second dish, whisk the eggs.
  3. Place panko breadcrumbs in a third shallow dish.
  4. Prepare a baking sheet for the breaded avocado slices and another with paper towels for draining fried avocados.
  5. Heat vegetable oil in a pan to 360 degrees.
  6. Cut avocados in half, remove the pit, peel, and slice into ½-inch thick slices.
  7. Dredge each avocado slice in flour, then coat in egg, and finally cover with panko, pressing to adhere.
  8. Fry half the avocado slices in the hot oil until golden brown on both sides, about 1 minute per side.
  9. Drain on paper towels and season with salt.
  10. Repeat with remaining slices and serve warm with dipping sauce.
