Instructions
- Whisk together the flour, cumin, chili powder, salt, and pepper in a shallow dish.
- In a second dish, whisk the eggs.
- Place panko breadcrumbs in a third shallow dish.
- Prepare a baking sheet for the breaded avocado slices and another with paper towels for draining fried avocados.
- Heat vegetable oil in a pan to 360 degrees.
- Cut avocados in half, remove the pit, peel, and slice into ½-inch thick slices.
- Dredge each avocado slice in flour, then coat in egg, and finally cover with panko, pressing to adhere.
- Fry half the avocado slices in the hot oil until golden brown on both sides, about 1 minute per side.
- Drain on paper towels and season with salt.
- Repeat with remaining slices and serve warm with dipping sauce.
