Ingredients

The fries

  • 2 large avocados
  • ¾ cup panko bread crumbs
  • ½ cup all-purpose flour
  • 2 large eggs, beaten
  • 1 teaspoon coriander
  • 1 teaspoon cumin
  • 1 teaspoon sea salt
  • extra-virgin olive oil for drizzling

Dipping sauces

  • to taste Chipotle Ranch or desired dipping sauce

Instructions

  1. Preheat the oven to 425°F and line a baking sheet with parchment paper.
  2. In a shallow dish, mix together the panko, coriander, cumin, and salt.
  3. Place the flour in one bowl and the beaten eggs in another bowl.
  4. Cut the avocados lengthwise into 8 slices and peel the skins.
  5. Dip each avocado slice in flour, then in egg, and finally in the panko mixture.
  6. Arrange the breaded avocado slices on the baking sheet and drizzle with olive oil.
  7. Bake for 12 to 14 minutes, or until golden brown and crisp.
