Spicy Oven Baked Sweet Potato Fries

Instructions
- Clean the sweet potatoes, remove ends if necessary, and cut into long, thin, uniform strips about ¼" thick.
- Soak the potato strips in cold water for at least 30 minutes, or up to 24 hours in the fridge.
- Preheat the oven to 475°F and place a large baking sheet inside.
- Drain, rinse, and pat dry the potato strips.
- Drizzle the potato strips with avocado oil and toss to coat evenly.
- In a separate bowl, mix corn starch, nutritional yeast, garlic powder, paprika, ground pepper, and red pepper flakes.
- Sprinkle the spice mixture over the oil-coated potato strips and toss to coat evenly.
- Carefully take the hot baking sheet out of the oven and reduce the temperature to 450°F.
- Line the baking sheet with parchment paper and arrange the potato strips in a single layer without overlapping.
- Bake for 15 minutes, then flip each fry individually.
- Resume baking for another 10-15 minutes until fries are crispy and golden.
- Remove from the oven, sprinkle with salt, and let cool for 5 minutes before serving.
