Instructions
- Blend all the sauce ingredients in a high-speed blender until smooth, adjusting the consistency with water if needed.
- Preheat the oven to 400°F.
- Toss broccoli florets with olive oil, salt, and pepper, then spread on a baking sheet.
- Roast the broccoli for about 15 minutes until lightly browned and tender.
- In bowls, layer warm rice and chickpeas, then top with roasted broccoli.
