Ingredients

Spiced Sunflower Sauce

  • ½ cup raw sunflower seeds
  • 2 tablespoons nutritional yeast
  • 1 clove garlic
  • 1 inch fresh turmeric (or ½ teaspoon turmeric powder)
  • 1 teaspoon tomato paste
  • 1 teaspoon raw apple cider vinegar
  • ½ teaspoon ground cumin
  • ½ teaspoon chili powder
  • ½ teaspoon pure maple syrup or other liquid sweetener
  • ¾ cup filtered water
  • ½ cup neutral-tasting oil
  • ¼ cup fresh lemon juice
  • to taste sea salt and ground black pepper
  • to taste hot sauce

Roasted Broccoli Bowl

  • 2 heaped cups broccoli florets
  • 1-2 teaspoons olive oil
  • to taste sea salt and ground black pepper
  • 2 portions cooked brown/black/red rice
  • 1 cup cooked chickpeas
  • 2 green onions thinly sliced
  • extra to taste sunflower seeds

Instructions

  1. Blend all the sauce ingredients in a high-speed blender until smooth, adjusting the consistency with water if needed.
  2. Preheat the oven to 400°F.
  3. Toss broccoli florets with olive oil, salt, and pepper, then spread on a baking sheet.
  4. Roast the broccoli for about 15 minutes until lightly browned and tender.
  5. In bowls, layer warm rice and chickpeas, then top with roasted broccoli.
  6. Drizzle with the spiced sunflower sauce, garnish with green onions and sunflower seeds, and serve immediately.
