Ingredients

The beans

  • 3 cans pinto beans

The sauce

  • 1 ½ cups enchilada sauce
  • 1 tablespoon fresh oregano

The cheese

  • ½ – ¾ cups melty cheese

Other

  • 1 teaspoon olive oil

To serve with

  • to taste yellow rice or tortillas
  • to taste fresh tomatoes
  • to taste avocado
  • to taste pickled onion
  • to taste cilantro
  • to taste sour cream or Mexican crema
  • to taste hot sauce
  • to taste lime wedges

Instructions

  1. Preheat the oven to 350°F.
  2. If making yellow rice, start preparing it.
  3. Grease a baking dish and place the drained beans in it.
  4. Mix the beans with the enchilada sauce, oregano, and salt to taste.
  5. Top with cheese and bake for about 20 minutes until heated through and cheese is melted.
  6. Prepare toppings while the beans are baking.
  7. Serve the beans in bowls with rice and desired toppings.
