Instructions
- Preheat the oven to 350°F.
- If making yellow rice, start preparing it.
- Grease a baking dish and place the drained beans in it.
- Mix the beans with the enchilada sauce, oregano, and salt to taste.
- Top with cheese and bake for about 20 minutes until heated through and cheese is melted.
- Prepare toppings while the beans are baking.
- Serve the beans in bowls with rice and desired toppings.
