Grilled Portobello Burgers

Ingredients

The burgers

  • 4 count portobello mushrooms
  • 1 tablespoon olive oil
  • 4 count ciabatta buns, halved
  • 1 count red pepper, whole
  • 1 count red onion, sliced into ½” slices
  • 1 cup spinach
  • to taste salt

Avocado Chimichurri

  • 2 count avocados, mashed
  • ¼ cup fresh cilantro
  • 1 clove garlic, minced
  • 2 tablespoons lime juice
  • 1 tablespoon red wine vinegar
  • ¼ teaspoon red pepper flakes
  • to taste salt & pepper

Instructions

  1. Preheat the grill to medium-high heat, about 375-400°F.
  2. Scoop out the insides of the portobello mushrooms and remove the stems.
  3. Drizzle olive oil over the mushrooms and red pepper, and season with salt.
  4. Prepare the grill by spraying with cooking spray or rubbing with an olive oil-soaked rag.
  5. Grill the portobello mushrooms for 4-5 minutes per side, the red pepper for 5-6 minutes per side, and onion slices for 3-4 minutes per side. Remove from the grill and let rest.
  6. Once the red pepper has cooled, slice it.
  7. Grill the inside of the ciabatta roll halves for 2 minutes to toast them slightly.
  8. In a bowl, combine avocado, cilantro, garlic, lime juice, red wine vinegar, red pepper flakes, salt, and pepper. Mash together.
  9. Assemble the burgers by adding 2 tablespoons of avocado chimichurri, ¼ cup of spinach, the portobello burger, red pepper, and red onion to each ciabatta roll.
  10. Serve the burgers.
