Grilled Portobello Burgers

Instructions
- Preheat the grill to medium-high heat, about 375-400°F.
- Scoop out the insides of the portobello mushrooms and remove the stems.
- Drizzle olive oil over the mushrooms and red pepper, and season with salt.
- Prepare the grill by spraying with cooking spray or rubbing with an olive oil-soaked rag.
- Grill the portobello mushrooms for 4-5 minutes per side, the red pepper for 5-6 minutes per side, and onion slices for 3-4 minutes per side. Remove from the grill and let rest.
- Once the red pepper has cooled, slice it.
- Grill the inside of the ciabatta roll halves for 2 minutes to toast them slightly.
- In a bowl, combine avocado, cilantro, garlic, lime juice, red wine vinegar, red pepper flakes, salt, and pepper. Mash together.
- Assemble the burgers by adding 2 tablespoons of avocado chimichurri, ¼ cup of spinach, the portobello burger, red pepper, and red onion to each ciabatta roll.
- Serve the burgers.
