Ingredients

Mushroom Marinade

  • cup soy sauce
  • 1 inch knob ginger
  • 3 cloves garlic
  • 1 tablespoon red wine vinegar
  • 1 piece aji amarillo or jalapeño
  • 1 teaspoon ground paprika

Mushroom Burgers

  • 4 pieces portobello mushrooms
  • as needed none neutral oil (for the grill)
  • 4 pieces brioche burger buns
  • 4 slices Swiss cheese
  • as needed none aji verde (for buns)
  • as needed none lettuce
  • 1 piece tomato (sliced)
  • ½ piece red onion (peeled and thinly sliced)

Instructions

  1. Blend the soy sauce, ginger, garlic, red wine vinegar, pepper, and paprika until smooth.
  2. Preheat the grill to medium-high and grease the grates.
  3. Marinate the portobello mushrooms in the marinade for about 5 minutes.
  4. Toast the brioche buns on the grill until golden brown.
  5. Grill the portobello mushrooms for about 5 minutes, adding Swiss cheese on top to melt.
  6. Assemble the burgers with aji verde, lettuce, tomato, grilled portobello, and red onion.
