Instructions
- Blend the soy sauce, ginger, garlic, red wine vinegar, pepper, and paprika until smooth.
- Preheat the grill to medium-high and grease the grates.
- Marinate the portobello mushrooms in the marinade for about 5 minutes.
- Toast the brioche buns on the grill until golden brown.
- Grill the portobello mushrooms for about 5 minutes, adding Swiss cheese on top to melt.
- Assemble the burgers with aji verde, lettuce, tomato, grilled portobello, and red onion.
