Ingredients

  • 4 large portobello mushrooms
  • 2 tablespoons olive oil
  • 8 pieces sourdough bread
  • 4 slices provolone cheese
  • 1 large roasted red pepper, julienned
  • 1 cup buckwheat sprouts
  • to taste balsamic reduction

Instructions

  1. Make the balsamic reduction and refrigerate it.
  2. Preheat the grill to medium-high heat.
  3. Evenly spread olive oil on each portobello mushroom cap.
  4. Grill each side of the mushrooms for 5-7 minutes, adding provolone cheese on top to melt in the last moment.
  5. Grill the sourdough bread on each side for 2-3 minutes.
  6. Assemble the burger with grilled bread, portobello mushroom, roasted red pepper, buckwheat sprouts, and a drizzle of balsamic reduction.
  7. Serve the burgers.
