Instructions
- Preheat the oven to 400°F.
- In a bowl, toss the sweet potato rounds with olive oil, salt, and pepper.
- Spread the sweet potatoes on a baking sheet in a single layer.
- Bake until browned and tender, about 20 to 25 minutes, then let cool.
- To assemble, lay two pieces of bread on a surface.
- Add kale, followed by sweet potato rounds, pesto, apple slices, and blue cheese.
- Top with the second slice of bread, cut in half if desired, and serve.
