Roasted Sweet Potato Sandwich

Ingredients

  • 1 large sweet potato
  • 1 tablespoon olive oil
  • to taste salt
  • to taste black pepper
  • 4 slices hearty bread
  • cup chopped kale
  • 2 tablespoons basil pesto
  • 1 Granny Smith apple cored and thinly sliced
  • cup crumbled blue cheese

Instructions

  1. Preheat the oven to 400°F.
  2. In a bowl, toss the sweet potato rounds with olive oil, salt, and pepper.
  3. Spread the sweet potatoes on a baking sheet in a single layer.
  4. Bake until browned and tender, about 20 to 25 minutes, then let cool.
  5. To assemble, lay two pieces of bread on a surface.
  6. Add kale, followed by sweet potato rounds, pesto, apple slices, and blue cheese.
  7. Top with the second slice of bread, cut in half if desired, and serve.
