Veggie Hummus Sandwich with Sweet Potato

Instructions
- Preheat the oven to 400º F and prepare a baking sheet.
- Slice the sweet potato into thin slices and spread them on the baking sheet.
- Brush the sweet potato slices with oil and season with salt and pepper.
- Roast the sweet potato in the oven for about 20 minutes until golden brown.
- Spread hummus on one side of each slice of bread.
- Layer the roasted sweet potato, avocado, spinach, cucumber, tomato, basil, and pickled red onion on top of the hummus.
- Top with the remaining slice of bread and cut the sandwich in half if desired.
