Veggie Hummus Sandwich with Sweet Potato

Ingredients

  • 1 small sweet potato
  • 2 teaspoons grapeseed oil or olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 4 slices sandwich bread
  • 1 cup hummus
  • ½ avocado sliced
  • ¼ cup spinach or lettuce
  • ¼ cup sliced cucumber
  • ¼ cup sliced tomato
  • ¼ cup fresh basil
  • ¼ cup pickled red onion (optional)

Instructions

  1. Preheat the oven to 400º F and prepare a baking sheet.
  2. Slice the sweet potato into thin slices and spread them on the baking sheet.
  3. Brush the sweet potato slices with oil and season with salt and pepper.
  4. Roast the sweet potato in the oven for about 20 minutes until golden brown.
  5. Spread hummus on one side of each slice of bread.
  6. Layer the roasted sweet potato, avocado, spinach, cucumber, tomato, basil, and pickled red onion on top of the hummus.
  7. Top with the remaining slice of bread and cut the sandwich in half if desired.
