Ingredients

The roasted sweet potatoes

  • 1 piece sweet potato, diced
  • 1 tablespoon olive oil
  • to taste none seasoning

The salad

  • 2 cups fresh spinach, chopped
  • 1 tablespoon olive oil
  • to taste none seasoning
  • to taste none crumbled or shredded white cheese

The dip

  • to taste none hummus

Instructions

  1. Preheat the oven to 400 or 450°F.
  2. Toss the sweet potato, olive oil, and seasoning together and place on a baking sheet.
  3. Roast for 15-30 minutes until desired doneness.
  4. In a separate bowl, toss the spinach, olive oil, seasoning, and cheese.
  5. Plate the salad with a spoonful of hummus and add the roasted sweet potatoes.
