The dip
Instructions
- Preheat the oven to 400 or 450°F.
- Toss the sweet potato, olive oil, and seasoning together and place on a baking sheet.
- Roast for 15-30 minutes until desired doneness.
- In a separate bowl, toss the spinach, olive oil, seasoning, and cheese.
- Plate the salad with a spoonful of hummus and add the roasted sweet potatoes.
