Spicy Sweet Potato Hummus

Ingredients

  • 2 medium sweet potatoes
  • 3 tablespoons olive oil
  • 2 cups cooked chickpeas
  • 3 tablespoons tahini
  • 3 cloves garlic
  • 1 unit lemon (juice)
  • ½ unit lemon (zest)
  • to taste ground sea salt
  • 1 ½ teaspoons cayenne pepper
  • ½ teaspoon smoked paprika
  • ¼ teaspoon cumin

Instructions

  1. Preheat the oven to 400°F.
  2. Bake the sweet potatoes for 45 minutes to 1 hour until soft.
  3. Let the sweet potatoes cool, then peel the skin off.
  4. In a food processor, combine the olive oil, chickpeas, tahini, garlic, lemon juice, lemon zest, salt, cayenne pepper, smoked paprika, and cumin.
  5. Add the cooled sweet potatoes to the food processor and blend until smooth.
  6. Serve the hummus, optionally garnished with cayenne pepper and sesame seeds.
