Savory Pumpkin Hummus

Ingredients

The base

  • 1 15 oz chickpeas, drained and rinsed
  • ¾ cup pumpkin puree
  • 2 tbsp tahini
  • 2 tbsp olive oil
  • 1 clove garlic, pressed
  • 6 tbsp ice cold water

The spices

  • ¾ tsp salt
  • ¼ tsp cayenne
  • ½ tsp cumin
  • ½ tsp smoked paprika (optional)

Instructions

  1. 1. Drain and rinse the chickpeas.
  2. 2. In a food processor, combine chickpeas, pumpkin puree, tahini, olive oil, and garlic.
  3. 3. Blend while adding cold water by the tablespoon until the mixture is smooth, scraping down the sides as needed.
  4. 4. Add salt, cayenne, cumin, and paprika, then blend until completely smooth.
  5. 5. Serve with a drizzle of olive oil and additional paprika if desired.
