Sweet Potato Hummus

Ingredients

  • 1.5 cups garbanzo beans, cooked
  • ½ cup sweet potato puree
  • 2 tablespoons tahini
  • 2 tablespoons extra virgin olive oil (EVOO)
  • 2 tablespoons sriracha
  • teaspoon sea salt
  • teaspoon paprika
  • ½ teaspoon garlic powder
  • 2 tablespoons fresh thyme, chopped
  • 3 tablespoons fresh goat cheese

Instructions

  1. Blend garbanzo beans, sweet potato puree, tahini, EVOO, and sriracha in a food processor until smooth.
  2. Stop to scrape the sides with a spatula if necessary, and add more EVOO if the mixture is too thick.
  3. Add the spices and blend again to combine.
  4. Top with goat cheese and serve with fresh veggies and rice crackers.
