Thai Peanut Hummus

Ingredients

The base

  • 1 can (15 oz) chickpeas, drained and rinsed
  • ¼ cup natural peanut butter, salted
  • ½ tsp sesame oil
  • 2 tbsp sriracha
  • ½ tsp minced garlic
  • ¼ cup tahini
  • 1 tbsp honey
  • 1 tsp fresh ginger or ¼ tsp ground ginger
  • 2 tbsp fresh lime juice
  • cup olive oil or avocado oil
  • to taste salt

Toppings

  • to taste crushed peanuts
  • to taste cilantro
  • to taste more sriracha
  • to taste squeeze of lime

Instructions

  1. Drain and rinse the chickpeas, peeling them if desired.
  2. In a food processor, combine chickpeas, peanut butter, sesame oil, and sriracha, and process until smooth.
  3. Scrape down the sides as needed while blending.
  4. Add garlic, tahini, honey, ginger, and lime juice, and blend until combined.
  5. While blending, gradually add olive oil until the desired creaminess is achieved.
  6. Add salt to taste.
  7. Transfer to a bowl and garnish with toppings.
  8. Serve with pita, veggies, pretzels, or as desired.
