Toasted Sesame Hummus

Ingredients

The hummus

  • ¼ cup tahini
  • ¼ cup lemon juice
  • 2 tablespoons extra-virgin olive oil
  • 1 medium clove garlic
  • ½ teaspoon fine sea salt
  • 1 ½ teaspoons toasted sesame oil
  • 1 can (15 ounces) chickpeas
  • 2 to 4 tablespoons water
  • 1 teaspoon raw sesame seeds

For garnish and serving

  • to taste flaky sea salt
  • as needed toasted pita bread, carrot or bell pepper or celery sticks, crackers

Instructions

  1. Combine tahini, lemon juice, olive oil, garlic, salt, and ½ teaspoon sesame oil in a food processor and blend until smooth.
  2. Add half of the chickpeas and process for 1 minute, then add the remaining chickpeas and blend until thick and smooth.
  3. While blending, drizzle in 2 to 4 tablespoons of water to achieve desired consistency, and adjust seasoning with salt and sesame oil if needed.
  4. Toast sesame seeds in a skillet over medium heat until golden, about 2 to 4 minutes.
  5. Transfer hummus to a serving bowl, drizzle with sesame oil, sprinkle with sesame seeds and flaky sea salt, and serve with accompaniments.
