Detox Salad

Ingredients

The salad

  • 2 cups kale
  • 2 cups broccoli florets
  • 2 cups brussels sprouts
  • 2 cups red cabbage
  • 1 cup carrots
  • ½ cup fresh parsley
  • ½ cup almonds
  • 1 to 2 tablespoons sunflower seeds

The dressing

  • 3 tablespoons olive oil
  • ½ cup lemon juice
  • 1 tablespoon fresh ginger
  • 3 teaspoons Dijon mustard
  • 2 teaspoons honey
  • ¼ teaspoon salt

Instructions

  1. Chop all the veggies roughly and place them in a food processor to finely chop.
  2. Add the almonds to the food processor and pulse until roughly chopped, then mix with the salad and add sunflower seeds.
  3. In a small bowl, whisk together the dressing ingredients until smooth.
  4. Store the salad and dressing separately until ready to serve.
