Ingredients

The salad

  • 2 cups chopped kale
  • 2 hearts romaine, finely chopped
  • cups chopped Persian cucumbers
  • cups chopped sugar snap peas
  • 1 cup chopped fennel
  • 1 cup frozen peas, defrosted
  • ½ cup chopped pistachios

The dressing

  • ¼ cup extra virgin olive oil
  • ¼ cup lemon juice
  • 2 tbsp apple cider vinegar
  • ¼ cup finely diced onion
  • 2 cloves crushed garlic
  • to taste salt and pepper

Instructions

  1. Combine all the salad ingredients in a large bowl.
  2. Pour the dressing over the salad and gently toss until well mixed.
  3. Top with lemon zest and serve.
