Ingredients

The salad

  • 2 cups finely diced broccoli
  • 2 cups shredded red cabbage
  • 1 cup shredded carrots
  • ½ cup fresh cilantro, chopped
  • ½ cup fresh parsley, chopped
  • 2 each green onions, chopped
  • ½ cup sliced almonds (optional topping)

The dressing

  • 3 tablespoons fresh lemon juice
  • 1 tablespoon Dijon mustard
  • 2 tablespoons extra virgin olive oil
  • 1 clove garlic, minced
  • 1 inch fresh ginger, minced
  • 1 tablespoon honey
  • ¼ teaspoon salt and pepper

Instructions

  1. In a large bowl, whisk together the lemon juice, Dijon mustard, olive oil, garlic, ginger, honey, salt, and pepper to make the dressing.
  2. Add the broccoli, cabbage, carrots, cilantro, parsley, and green onions to the bowl and toss to coat the vegetables in the dressing.
  3. Let the salad marinate for 10 to 15 minutes to enhance the flavors.
  4. Before serving, stir the salad again and top with sliced almonds or any other desired toppings.
