Chopped Detox Salad

parsley

The dressing

crushed garlic

grated ginger

lemon juice

dijon mustard

extra virgin olive oil

Instructions
- Chop all the veggies into bite-sized pieces.
- Process each type of veggie in a food processor until finely chopped, working in batches.
- Finely chop the parsley and add it to a large bowl with the processed veggies, almonds, sunflower seeds, and dried cranberries.
- In a separate bowl, mix together the garlic, ginger, lemon juice, dijon mustard, honey, olive oil, salt, and pepper to create the dressing.
- Drizzle the dressing over the salad and toss everything together before serving.
