Instructions
- Remove the ribs from the kale leaves and chop the kale into small pieces.
- Sprinkle salt over the kale and massage it until it darkens and becomes fragrant.
- Prepare the Brussels sprouts by trimming the ends and slicing them thinly or shredding them in a food processor.
- Combine the tahini, vinegar, miso, maple syrup, and red pepper flakes in a bowl and whisk in water until smooth.
- Pour the dressing over the kale and Brussels sprouts and mix well.
- Toast the sliced almonds in a pan until golden and fragrant, then add them along with Parmesan to the salad.
- Toss everything together and serve immediately.
