Ingredients

Cookie dough

  • 1 ¾ cups ground raw cashews
  • ¾ cup ground raw oats
  • ¼ cup Agave Nectar
  • 2 teaspoons vanilla extract
  • ¼ cup coconut oil

Raw chocolate chips

  • 2 tablespoons coconut oil
  • ½ cup carob powder
  • ½ cup cocoa powder
  • 4 tablespoons agave nectar (or maple syrup)
  • 2 teaspoons vanilla

Instructions

  1. Grind the raw cashews and oats in a food processor or blender.
  2. Mix all cookie dough ingredients in a large bowl or blend them in the processor until a dough forms.
  3. Refrigerate the dough while preparing the chocolate chips.
  4. Combine all chocolate chip ingredients in a medium bowl.
  5. Roll the dough onto parchment paper and freeze for about 30 minutes, flipping halfway through for even freezing.
  6. Once frozen, cut the chocolate into chips and mix them into the dough.
  7. Refrigerate the cookies for about 30 minutes to harden.
