Instructions
- Grind the raw cashews and oats in a food processor or blender.
- Mix all cookie dough ingredients in a large bowl or blend them in the processor until a dough forms.
- Refrigerate the dough while preparing the chocolate chips.
- Combine all chocolate chip ingredients in a medium bowl.
- Roll the dough onto parchment paper and freeze for about 30 minutes, flipping halfway through for even freezing.
- Once frozen, cut the chocolate into chips and mix them into the dough.
- Refrigerate the cookies for about 30 minutes to harden.
