Raw Summer Squash Salad

Ingredients

  • 1.25–1.5 lbs summer squash or zucchini
  • to taste kosher salt or Maldon Sea Salt
  • to taste freshly ground pepper
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons extra virgin olive oil
  • to taste Pecorino Romano or Parmigiano Reggiano
  • ½ cup herbs (such as basil, parsley, chives, or tarragon)

Instructions

  1. Shave the zucchini and summer squash into thin coins or strips and place in a bowl.
  2. Season with salt and toss to coat.
  3. Add pepper, lemon juice, and olive oil, then toss again and adjust seasoning to taste.
  4. Shave the Pecorino or Parmesan into the bowl, add herbs, and toss gently to combine.
  5. Taste and adjust with more pepper, cheese, or herbs as needed.
  6. Transfer to a serving bowl and serve immediately or within an hour.
