Raw Summer Squash Salad

Pecorino Romano or Parmigiano Reggiano

herbs (such as basil, parsley, chives, or tarragon)
Instructions
- Shave the zucchini and summer squash into thin coins or strips and place in a bowl.
- Season with salt and toss to coat.
- Add pepper, lemon juice, and olive oil, then toss again and adjust seasoning to taste.
- Shave the Pecorino or Parmesan into the bowl, add herbs, and toss gently to combine.
- Taste and adjust with more pepper, cheese, or herbs as needed.
- Transfer to a serving bowl and serve immediately or within an hour.
