Ingredients

The salad

  • 3 pieces Zucchini, sliced thin
  • 3 pieces Yellow Summer Squash, sliced thin
  • 1 bunch Chives, finely chopped
  • 1 bunch Green Onions, sliced thin
  • 1 small handful Fresh Basil
  • ½ cup Parmesan Cheese, freshly shaved

The dressing

  • ¼ cup Olive Oil
  • 1 piece Lemon, juiced
  • 1 teaspoon Sea Salt
  • 1 teaspoon Black Pepper

Instructions

  1. Slice the zucchini, yellow squash, chives, and green onions, and add them to a large bowl.
  2. Add the basil leaves and shaved parmesan cheese to the bowl.
  3. Pour in the olive oil and lemon juice, then add the sea salt and black pepper.
  4. Toss the salad to combine and serve.
