Ingredients

  • 2-3 pieces yellow summer squash
  • 1 large stalk celery
  • 1 tablespoon finely chopped fresh basil
  • 2 teaspoons extra-virgin olive oil
  • 2 teaspoons freshly squeezed lemon juice
  • 1 teaspoon finely chopped fresh mint
  • ½ teaspoon freshly grated lemon zest
  • ¼ teaspoon ground cumin
  • 1 pinch crushed red pepper flakes (optional)
  • to taste sea salt
  • to taste freshly ground black pepper

Instructions

  1. Combine all the ingredients in a large bowl.
  2. Toss to coat the ingredients evenly.
  3. Serve immediately, garnished with basil or mint leaves and extra crushed pepper if desired.
