Crustless Quiche Loaded with Kale

Ingredients

The custard

  • 5 large eggs
  • 3 T. all-purpose flour
  • 1 cup crème fraîche
  • 1 cup whole milk
  • 1 tsp. kosher salt
  • ½ tsp. freshly ground black pepper
  • 1 T. fresh thyme

The greens

  • 1 to 3 cups uncooked coarsely chopped kale or chard or mustard greens

Instructions

  1. Preheat the oven to 375ºF.
  2. Whisk 1 egg and flour in a large bowl until smooth, then whisk in the remaining 4 eggs.
  3. In a medium bowl, whisk the crème fraîche until smooth, then whisk in the milk.
  4. Pour the egg mixture through a fine mesh sieve into the milk mixture, then whisk in the salt, pepper, and thyme.
  5. Place the greens in a pie plate and pour the egg mixture over them, pressing the greens down to submerge them.
  6. Bake in the oven for 10 minutes, then reduce the temperature to 325ºF and bake for an additional 30 minutes until just set.
  7. Let cool for at least 20 minutes before slicing. Serve warm or at room temperature.
