Crustless Quiche Loaded with Kale

uncooked coarsely chopped kale or chard or mustard greens
Instructions
- Preheat the oven to 375ºF.
- Whisk 1 egg and flour in a large bowl until smooth, then whisk in the remaining 4 eggs.
- In a medium bowl, whisk the crème fraîche until smooth, then whisk in the milk.
- Pour the egg mixture through a fine mesh sieve into the milk mixture, then whisk in the salt, pepper, and thyme.
- Place the greens in a pie plate and pour the egg mixture over them, pressing the greens down to submerge them.
- Bake in the oven for 10 minutes, then reduce the temperature to 325ºF and bake for an additional 30 minutes until just set.
- Let cool for at least 20 minutes before slicing. Serve warm or at room temperature.
