Instructions
- Grate the zucchini and place it in a colander lined with paper towels, sprinkling with salt and weighing it down to draw out moisture for 20 minutes.
- After 20 minutes, squeeze out excess water from the zucchini.
- Preheat the oven to 425°F (220°C) and place the zucchini in a bowl.
- Add the egg, almond flour, garlic powder, and minced onion to the zucchini and mix well.
- Fold in the cheese and season with salt and pepper.
- Line a pizza pan or baking sheet with parchment paper and spray it with cooking spray.
- Scoop the mixture onto the tray and shape into tots, then spray the tops with cooking spray.
- Bake for 15 minutes, flip the tots, and bake for an additional 10 minutes.
- Let cool for 5 minutes before serving with your favorite dipping sauce.
