Ingredients

  • 1 medium Zucchini, finely shredded
  • ¼ cup Fine Ground Almond Flour
  • 1 tbsp Fine Ground Almond Flour (additional)
  • 1 tbsp Dried Minced Onion
  • 1 large egg
  • ¼ cup Cheddar Cheese, finely grated
  • ¼ tsp Garlic Powder
  • to taste salt
  • to taste pepper

Instructions

  1. Grate the zucchini and place it in a colander lined with paper towels, sprinkling with salt and weighing it down to draw out moisture for 20 minutes.
  2. After 20 minutes, squeeze out excess water from the zucchini.
  3. Preheat the oven to 425°F (220°C) and place the zucchini in a bowl.
  4. Add the egg, almond flour, garlic powder, and minced onion to the zucchini and mix well.
  5. Fold in the cheese and season with salt and pepper.
  6. Line a pizza pan or baking sheet with parchment paper and spray it with cooking spray.
  7. Scoop the mixture onto the tray and shape into tots, then spray the tops with cooking spray.
  8. Bake for 15 minutes, flip the tots, and bake for an additional 10 minutes.
  9. Let cool for 5 minutes before serving with your favorite dipping sauce.
