Instructions
- Preheat the oven to 400°F.
- Mist a 12-cup mini muffin tin with cooking spray.
- Wrap the shredded zucchini in a paper towel and squeeze to remove excess moisture.
- In a medium bowl, combine all ingredients and mix until well combined.
- Spoon the mixture into the prepared muffin tin, pressing down to compact each cup.
- Bake for 15-18 minutes until the tops are golden.
- Run a plastic knife around the edges of each tot while still in the tin to release them.
