Instructions
- Preheat the oven to 400°F (205°C).
- Boil the potato for 6-8 minutes until fork-tender, and blanch the broccoli and cauliflower for about 1 minute.
- Cut the stems of the broccoli and cauliflower into sticks or rounds, season with olive oil, salt, and pepper, and set aside.
- Strain the potato, broccoli, and cauliflower, and place them in a food processor with the other ingredients.
- Pulse the mixture until crumbly and it holds together.
- Form the mixture into tot shapes using about a heaping tablespoon for each.
- Bake the tots on a parchment-lined cookie sheet for 30-35 minutes until the edges are browned.
- While baking, prepare the dip by blending all ingredients except chives until smooth, then pulse in the chives.
- Serve the veggie tots with the dip.
