Instructions
- Preheat the oven to 425°F.
- In a large oven-safe or cast iron skillet, melt the butter over medium heat.
- Add the onion, celery, carrots, and parsley, cooking until the onions are translucent.
- Stir in the minced garlic and cook for an additional minute.
- Sprinkle the flour over the vegetables and stir to combine.
- Pour in the chicken broth and stir for about one minute.
- Add the shredded chicken, chopped broccoli, salt, pepper, and thyme, cooking until the mixture comes to a boil and the broccoli is tender-crisp, about 2 to 3 minutes.
- Top the mixture with the veggie tots and place the skillet in the preheated oven.
- Bake for 16 minutes, until the veggie tots are crisp and hot.
