Ingredients

The filling

  • 1 tbsp unsalted butter
  • ½ cup chopped onion
  • ½ cup chopped celery
  • ½ cup chopped carrots
  • ¼ cup chopped fresh parsley
  • 1 clove garlic, minced
  • 2 tbsp flour
  • cups low sodium chicken broth
  • cups shredded cooked chicken breast
  • cups chopped broccoli florets
  • ¾ tsp kosher salt
  • tsp ground black pepper
  • ½ tsp dried thyme

The topping

  • 16 oz frozen Green Giant Broccoli and Cheese Veggie Tots

Instructions

  1. Preheat the oven to 425°F.
  2. In a large oven-safe or cast iron skillet, melt the butter over medium heat.
  3. Add the onion, celery, carrots, and parsley, cooking until the onions are translucent.
  4. Stir in the minced garlic and cook for an additional minute.
  5. Sprinkle the flour over the vegetables and stir to combine.
  6. Pour in the chicken broth and stir for about one minute.
  7. Add the shredded chicken, chopped broccoli, salt, pepper, and thyme, cooking until the mixture comes to a boil and the broccoli is tender-crisp, about 2 to 3 minutes.
  8. Top the mixture with the veggie tots and place the skillet in the preheated oven.
  9. Bake for 16 minutes, until the veggie tots are crisp and hot.
