Hummus Veggie Tots

Instructions
- 1. Microwave broccoli florets and carrots covered with a damp paper towel for 2 minutes.
- 2. Process the microwaved vegetables with onion and zucchini until minced.
- 3. Combine minced veggies with the remaining ingredients in a mixing bowl and stir until well combined.
- 4. Preheat the oven to 400°F and prepare a baking sheet with foil or parchment paper and cooking spray.
- 5. Form rounded tablespoon portions of the mixture into a tot shape and place on the baking sheet.
- 6. Mist the tops of the tots with cooking spray and bake for 10 minutes.
- 7. Flip the tots and bake for an additional 10-12 minutes until golden brown.
- 8. Serve warm.
