Hummus Veggie Tots

Ingredients

  • 2 cups broccoli florets
  • ¼ cup sliced carrots
  • ¼ of a small onion
  • ½ cup chopped zucchini
  • 2 large eggs
  • ¾ cup panko breadcrumbs
  • ½ teaspoon salt
  • cup Sabra hummus

Instructions

  1. 1. Microwave broccoli florets and carrots covered with a damp paper towel for 2 minutes.
  2. 2. Process the microwaved vegetables with onion and zucchini until minced.
  3. 3. Combine minced veggies with the remaining ingredients in a mixing bowl and stir until well combined.
  4. 4. Preheat the oven to 400°F and prepare a baking sheet with foil or parchment paper and cooking spray.
  5. 5. Form rounded tablespoon portions of the mixture into a tot shape and place on the baking sheet.
  6. 6. Mist the tops of the tots with cooking spray and bake for 10 minutes.
  7. 7. Flip the tots and bake for an additional 10-12 minutes until golden brown.
  8. 8. Serve warm.
