Cauliflower Sweet Potato Tots

Instructions
- Peel and cut the sweet potato into small pieces, then steam for 3-4 minutes.
- Pulse the steamed sweet potato in a food processor until finely shredded, then squeeze out excess moisture.
- Steam the cauliflower rice for 2 minutes until al dente, then press out excess moisture.
- Combine the sweet potato and cauliflower in a bowl, then add the remaining ingredients and mix by hand.
- Scoop and form the mixture into balls or cylinders, placing them on a lined baking sheet.
- Chill the formed tots in the fridge for 15 minutes or in the freezer for 10 minutes.
- Preheat the air fryer or oven to 400 degrees Fahrenheit.
- Spray each tot with cooking spray or lightly brush with oil.
- Air fry in batches for 12-14 minutes, flipping halfway, until golden and crispy.
