Cauliflower Sweet Potato Tots

Ingredients

The mixture

  • 1 large sweet potato, about 350 grams (3 cups grated/shredded)
  • 1 small head cauliflower, riced (3 cups)
  • 1 teaspoon garlic powder
  • 1 teaspoon seasoned salt or kosher salt
  • ½ cup chopped onion
  • ½ cup grated parmesan or nutritional yeast
  • 3–4 teaspoons olive oil (extra as needed)
  • 1 large egg white (or substitute for vegan option)
  • 3–4 tablespoons arrowroot or cornstarch
  • cup shredded cheese or vegan cheese (optional)

The cooking spray

  • as needed cooking oil spray

Instructions

  1. Peel and cut the sweet potato into small pieces, then steam for 3-4 minutes.
  2. Pulse the steamed sweet potato in a food processor until finely shredded, then squeeze out excess moisture.
  3. Steam the cauliflower rice for 2 minutes until al dente, then press out excess moisture.
  4. Combine the sweet potato and cauliflower in a bowl, then add the remaining ingredients and mix by hand.
  5. Scoop and form the mixture into balls or cylinders, placing them on a lined baking sheet.
  6. Chill the formed tots in the fridge for 15 minutes or in the freezer for 10 minutes.
  7. Preheat the air fryer or oven to 400 degrees Fahrenheit.
  8. Spray each tot with cooking spray or lightly brush with oil.
  9. Air fry in batches for 12-14 minutes, flipping halfway, until golden and crispy.
