Cauliflower Tots

Ingredients

The base

  • 1 ½ lb Cauliflower (riced, about 1 head)
  • 1 large Egg

The binding and flavoring

  • 1 ½ cup Mozzarella cheese
  • 2 cloves Garlic (minced, optional)
  • ¾ tsp Sea salt

The oil

  • ¼ cup Avocado oil (or any oil; divided)

Instructions

  1. Stir fry the riced cauliflower in 2 tablespoons of oil until soft and lightly browned.
  2. In a large bowl, whisk the egg and mix in the mozzarella, garlic, and sea salt.
  3. Stir the hot cauliflower rice into the bowl to melt the cheese and make the mixture sticky.
  4. Use a cookie scoop to form small patties from the mixture.
  5. Heat the remaining oil in a pan over medium heat and fry the patties until golden brown on both sides.
  6. Transfer the cooked tots to paper towels to drain excess oil.
