Ingredients

  • 1 tablespoon olive oil for the baking sheet
  • 1 pound organic frozen cauliflower florets
  • ½ cup gluten-free bread crumbs
  • ¼ cup grated Parmesan cheese
  • 1 large egg
  • 2 tablespoons chopped fresh parsley
  • ¼ teaspoon garlic powder
  • ¼ teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F and prepare a baking sheet with parchment paper and olive oil.
  2. Microwave the cauliflower according to package directions and let it cool.
  3. Extract moisture from the cauliflower using a dish towel or cheesecloth and place it in a large bowl.
  4. Break apart the cauliflower florets and add bread crumbs, cheese, egg, parsley, garlic powder, and pepper.
  5. Mix the ingredients until they hold together.
  6. Scoop the mixture onto the baking sheet and shape into oval tots.
  7. Bake for 15 minutes, flip the tots, and bake for an additional 15 minutes until crispy.
  8. Serve warm.
