Ingredients

Cauliflower Tots

  • 12 ounce bag of frozen riced cauliflower
  • 2 large eggs
  • ½ cup shredded cheddar cheese
  • ¼ cup panko breadcrumbs
  • ½ teaspoon coarse salt
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon ground black pepper

Spicy Dipping Sauce

  • ¼ cup mayonnaise
  • 1-2 tablespoons hot sauce
  • 1 tablespoon chopped dill pickles
  • 2 teaspoons Dijon or whole grain mustard
  • 1 clove garlic, peeled and minced

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Steam the riced cauliflower according to package directions and let it cool slightly.
  3. Squeeze the steamed cauliflower in a kitchen towel to drain excess water and transfer it to a mixing bowl.
  4. Whisk in the eggs, cheese, breadcrumbs, salt, onion powder, garlic powder, and black pepper until well combined.
  5. Scoop 1-2 tablespoons of the mixture and shape it into tater tots, placing them on the baking sheet about 2 inches apart.
  6. Bake for 15-18 minutes until the tots are firm and golden brown, then allow to cool slightly.
  7. In a separate bowl, whisk together the ingredients for the dipping sauce until well combined.
