Sweet Potato Tater Tots

Ingredients

  • 2 lbs sweet potatoes
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¾ teaspoon sea salt
  • 1 tablespoon coconut oil
  • 1 teaspoon coconut oil (for brushing)
  • 2 teaspoons cornstarch

Instructions

  1. Preheat the oven to 425°F (220°C) and line two baking sheets with silicone mats or parchment paper.
  2. Boil a large pot of water and parboil the sweet potatoes for 18-20 minutes until firm but easily pierced.
  3. Drain the sweet potatoes and run cold water over them to cool completely.
  4. Peel the skins off the cooled sweet potatoes and grate them into a large bowl.
  5. Add smoked paprika, garlic powder, onion powder, cornstarch, sea salt, and 1 tablespoon of coconut oil to the grated sweet potatoes and mix well.
  6. Scoop out the mixture with a tablespoon and shape it into tater tots, placing them on the prepared baking sheets.
  7. Brush the tots with the remaining coconut oil.
  8. Bake for 40 minutes, flipping halfway through, until golden brown and crispy.
  9. Allow to cool slightly before serving.
