Sweet Potato Tater Tots

Instructions
- Preheat the oven to 425°F (220°C) and line two baking sheets with silicone mats or parchment paper.
- Boil a large pot of water and parboil the sweet potatoes for 18-20 minutes until firm but easily pierced.
- Drain the sweet potatoes and run cold water over them to cool completely.
- Peel the skins off the cooled sweet potatoes and grate them into a large bowl.
- Add smoked paprika, garlic powder, onion powder, cornstarch, sea salt, and 1 tablespoon of coconut oil to the grated sweet potatoes and mix well.
- Scoop out the mixture with a tablespoon and shape it into tater tots, placing them on the prepared baking sheets.
- Brush the tots with the remaining coconut oil.
- Bake for 40 minutes, flipping halfway through, until golden brown and crispy.
- Allow to cool slightly before serving.
