Ingredients

  • 2 small sweet potatoes, peeled (2 cups shredded)
  • 2 tablespoons almond flour
  • 1 teaspoon garlic powder
  • teaspoon sea salt
  • 1-2 tablespoons extra virgin olive oil
  • 1 large egg (optional, beaten)

Instructions

  1. Preheat the oven to 400ºF and prepare a baking sheet with nonstick spray.
  2. Grate the sweet potatoes using the smallest grate size and mix with a pinch of salt; let sit for 10-15 minutes to draw out moisture.
  3. Squeeze the moisture out of the sweet potatoes using paper towels.
  4. In a mixing bowl, combine the sweet potatoes with the almond flour, garlic powder, and sea salt; mix well.
  5. Use a teaspoon to scoop and form the mixture into tater tots, placing them on the greased baking sheet.
  6. Sprinkle the formed tater tots with olive oil.
  7. Bake for 10 minutes, then flip the tater tots and bake for an additional 10 minutes.
