Sweet Potato Tater Tots

Instructions
- Preheat the oven to 400ºF and prepare a baking sheet with nonstick spray.
- Grate the sweet potatoes using the smallest grate size and mix with a pinch of salt; let sit for 10-15 minutes to draw out moisture.
- Squeeze the moisture out of the sweet potatoes using paper towels.
- In a mixing bowl, combine the sweet potatoes with the almond flour, garlic powder, and sea salt; mix well.
- Use a teaspoon to scoop and form the mixture into tater tots, placing them on the greased baking sheet.
- Sprinkle the formed tater tots with olive oil.
- Bake for 10 minutes, then flip the tater tots and bake for an additional 10 minutes.
