Ingredients

The Tater Tots

  • 2 medium-sized russet potatoes, peeled
  • to taste Salt
  • to taste Pepper
  • 1 large egg, beaten
  • ¾ cup finely shredded cheese
  • 4 slices cooked bacon, finely chopped

The Dipping Sauce

  • ¼ cup Greek yogurt
  • ¼ cup creme fraiche
  • 2 to 3 green onions, thinly sliced

Instructions

  1. Shred the potatoes and soak them in water for 1 hour.
  2. Boil salted water and blanch the soaked potatoes for 2 to 3 minutes.
  3. Drain and rinse the potatoes with cold water, then squeeze out excess moisture.
  4. Mix the potatoes with salt, pepper, beaten egg, cheese, and bacon.
  5. Form the mixture into logs using plastic wrap and freeze for 30 minutes.
  6. Preheat the oven to 350°F.
  7. Slice the logs into 1 ½-inch tots and place on a baking sheet.
  8. Bake for 30 minutes until golden brown.
  9. Prepare the dipping sauce by mixing Greek yogurt, creme fraiche, salt, and green onions.
  10. Serve the tater tots hot with the dipping sauce.
