Loaded Baked Potato Tater Tots

The Dipping Sauce

Instructions
- Shred the potatoes and soak them in water for 1 hour.
- Boil salted water and blanch the soaked potatoes for 2 to 3 minutes.
- Drain and rinse the potatoes with cold water, then squeeze out excess moisture.
- Mix the potatoes with salt, pepper, beaten egg, cheese, and bacon.
- Form the mixture into logs using plastic wrap and freeze for 30 minutes.
- Preheat the oven to 350°F.
- Slice the logs into 1 ½-inch tots and place on a baking sheet.
- Bake for 30 minutes until golden brown.
- Prepare the dipping sauce by mixing Greek yogurt, creme fraiche, salt, and green onions.
- Serve the tater tots hot with the dipping sauce.
