Instructions
- Prepare pickled jalapeños by boiling vinegar, water, garlic, sugar, and salt, then adding sliced jalapeños and letting them sit for 10-15 minutes before refrigerating.
- Mix sour cream, heavy cream, sea salt, and lime juice for lime crema, letting it sit unrefrigerated for 90 minutes before refrigerating.
- Preheat the oven to 450°F.
- Spread tater tots on a parchment-lined baking sheet and bake for 25-30 minutes until crispy.
- Mound the crispy tater tots, mix in grape tomatoes, and top with heated chili and shredded cheddar.
- Return to the oven for 5 minutes until cheese melts.
- Carefully slide the tater tot nachos onto a serving dish and garnish with pickled jalapeños, bacon, scallions, cilantro, and lime crema.
- Serve and enjoy!
