Tater Tots with Bacon

Ingredients

The Tater Tots

  • 2 ½ pounds russet potatoes
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon all-purpose flour
  • 1 ¼ teaspoons kosher salt
  • 1 teaspoon garlic powder
  • ½ teaspoon ground black pepper
  • 6 strips bacon
  • ½ cup freshly grated sharp cheddar cheese
  • 3 tablespoons chopped chives

For Serving

  • to taste nonfat plain Greek yogurt or sour cream

Instructions

  1. Cook the bacon until crispy, then crumble it.
  2. Preheat the oven to 425°F.
  3. Scrub and peel the potatoes, then simmer them in water for 6 minutes until halfway cooked.
  4. Drain the potatoes and let them cool for 15 minutes before grating them into a bowl.
  5. Add olive oil, flour, salt, garlic powder, and black pepper to the grated potatoes and mix well.
  6. Stir in the crumbled bacon, cheese, and chives.
  7. Grease mini muffin tins with nonstick spray and scoop the mixture into each cavity, pressing it down.
  8. Bake for 15 minutes until brown at the edges, then flip the tots, spray the tops, and bake for an additional 12-15 minutes until golden brown.
  9. Let cool for 2 minutes before serving with Greek yogurt or sour cream.
