Tater Tots with Bacon

Instructions
- Cook the bacon until crispy, then crumble it.
- Preheat the oven to 425°F.
- Scrub and peel the potatoes, then simmer them in water for 6 minutes until halfway cooked.
- Drain the potatoes and let them cool for 15 minutes before grating them into a bowl.
- Add olive oil, flour, salt, garlic powder, and black pepper to the grated potatoes and mix well.
- Stir in the crumbled bacon, cheese, and chives.
- Grease mini muffin tins with nonstick spray and scoop the mixture into each cavity, pressing it down.
- Bake for 15 minutes until brown at the edges, then flip the tots, spray the tops, and bake for an additional 12-15 minutes until golden brown.
- Let cool for 2 minutes before serving with Greek yogurt or sour cream.
