Instructions
- Prepare pickled red onions by combining all ingredients in a mason jar, shaking to combine, and letting sit for 30 minutes before straining.
- Preheat the oven to 425°F and prepare a baking sheet with foil or a wire rack.
- Place bacon strips on the prepared baking sheet and toss frozen tots in olive oil and salt.
- Spread the tots on a separate baking sheet and bake both the bacon and tots at 425°F.
- Remove bacon when crispy (about 13-15 minutes) and continue baking tots until browned and crispy (about 7-8 minutes).
- Melt butter in a small pan, add buffalo sauce, garlic powder, and pepper, and mix well.
- Toss cooked tots in the buffalo sauce mixture and transfer to an oven-safe dish.
- Bake for an additional 2-3 minutes to re-crisp, then cover with shredded cheese and bake until melted (about 5 minutes).
- Top with ranch dressing, chopped bacon, green onion, blue cheese crumbles, and pickled red onion, then serve hot.
