Ingredients

  • 3 cups shredded chicken
  • 2 cups frozen cauliflower florets
  • 2 oz cream cheese
  • ½ cup plain Greek yogurt
  • ½ cup buffalo wing sauce
  • 1 tbsp ranch seasoning powder
  • 1 cup cheddar cheese
  • 20 oz frozen tater tots
  • ½ cup Mexican blend cheese
  • to taste green onions for topping

Instructions

  1. Preheat the oven to 450°F.
  2. In a large bowl, whisk together cream cheese, Greek yogurt, buffalo sauce, and ranch powder.
  3. Add cooked cauliflower, shredded chicken, and cheddar cheese to the mixture and combine well.
  4. Spread the mixture evenly in a large baking dish.
  5. Top with frozen tater tots in a single layer.
  6. Bake for 30 minutes until tater tots are golden brown.
  7. Remove from the oven and sprinkle with Mexican blend cheese.
  8. Return to the oven and bake for an additional 3-5 minutes until cheese is melted.
  9. Serve with a drizzle of ranch dressing or a dollop of Greek yogurt or sour cream.
