Instructions
- Heat oil in a large skillet over medium heat.
- Add mushrooms, carrots, bell pepper, and onion, sprinkling with salt, and sauté for 8 to 10 minutes until softened.
- Stir in garlic, chipotle chili peppers, and tomato paste, cooking for 2 to 3 minutes.
- Add chili powder, oregano, paprika, and cinnamon, toasting for 30 seconds.
- Mix in drained black beans and enchilada sauce, simmering for at least 10 minutes.
- Preheat the oven to 400°F.
- Transfer the black bean mixture to an 8x8-inch baking dish and top with tater tots and cheese.
- Bake for 20 to 25 minutes until tater tots are golden and cheese is melted.
