Ingredients

The filling

  • 1 tablespoon canola oil
  • 8 ounces white mushrooms
  • 2 whole carrots
  • 1 medium orange bell pepper
  • ½ medium sweet yellow onion
  • ½ teaspoon kosher salt
  • 3 cloves garlic
  • 2 each chipotle chili peppers
  • 2 tablespoons tomato paste
  • 1 teaspoon chili powder
  • 1 teaspoon dry oregano
  • ½ teaspoon paprika
  • a pinch cinnamon
  • 2 cans (15-ounce) black beans
  • 1 can (10-ounce) red enchilada sauce

The topping

  • 32 ounces tater tots
  • 1 cup shredded cheddar cheese

Instructions

  1. Heat oil in a large skillet over medium heat.
  2. Add mushrooms, carrots, bell pepper, and onion, sprinkling with salt, and sauté for 8 to 10 minutes until softened.
  3. Stir in garlic, chipotle chili peppers, and tomato paste, cooking for 2 to 3 minutes.
  4. Add chili powder, oregano, paprika, and cinnamon, toasting for 30 seconds.
  5. Mix in drained black beans and enchilada sauce, simmering for at least 10 minutes.
  6. Preheat the oven to 400°F.
  7. Transfer the black bean mixture to an 8x8-inch baking dish and top with tater tots and cheese.
  8. Bake for 20 to 25 minutes until tater tots are golden and cheese is melted.
