Ingredients

  • 3 teaspoons avocado oil
  • 1 medium yellow onion, diced
  • 1 lb lean ground beef
  • 8 oz diced mushrooms
  • ¼ cup all-purpose flour
  • 3 cups low-sodium chicken broth
  • ½ teaspoon fine salt
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon black pepper
  • 1 15-ounce can cooked lentils
  • 12 oz frozen mixed vegetables
  • 1 cup frozen cauliflower rice
  • cups shredded cheddar cheese
  • 28 oz frozen tater tots

Instructions

  1. Preheat the oven to 400°F and prepare a baking dish.
  2. Sauté onions in oil until fragrant, then add ground beef and cook until browned.
  3. Transfer the beef mixture to the baking dish.
  4. In the same skillet, cook mushrooms in remaining oil until soft, then add flour and broth gradually, stirring until thickened.
  5. Mix in seasonings and pour the mushroom mixture over the beef in the baking dish.
  6. Add lentils, mixed vegetables, cauliflower rice, and part of the cheese, stirring to combine.
  7. Spread the mixture evenly in the dish, layer tater tots on top, and sprinkle remaining cheese.
  8. Bake for 35-40 minutes until bubbly and golden brown.
