Healthy Tater Tot Casserole with Beef and Lentils

Instructions
- Preheat the oven to 400°F and prepare a baking dish.
- Sauté onions in oil until fragrant, then add ground beef and cook until browned.
- Transfer the beef mixture to the baking dish.
- In the same skillet, cook mushrooms in remaining oil until soft, then add flour and broth gradually, stirring until thickened.
- Mix in seasonings and pour the mushroom mixture over the beef in the baking dish.
- Add lentils, mixed vegetables, cauliflower rice, and part of the cheese, stirring to combine.
- Spread the mixture evenly in the dish, layer tater tots on top, and sprinkle remaining cheese.
- Bake for 35-40 minutes until bubbly and golden brown.
