Ingredients

  • 2 teaspoons olive oil
  • ½ medium onion, diced
  • 8 ounces baby bella mushrooms, roughly chopped
  • ¼ teaspoon salt
  • 8 ounces meatless ground beef (optional, such as Impossible or Beyond)
  • 3-4 cloves garlic, minced
  • 1 teaspoon dry thyme
  • ¼ teaspoon black pepper
  • ¼ cup vegan butter
  • ¼ cup all-purpose flour
  • 3 cups unsweetened non-dairy milk (soy, almond, or oat)
  • 1 tablespoon soy sauce
  • 12 ounces frozen cut green beans
  • 32 ounces frozen tater tots

Instructions

  1. Preheat the oven to 375°F and lightly spray an 8x8 casserole dish with non-stick spray.
  2. In a medium skillet, heat olive oil and sauté onions and mushrooms with salt for 7-8 minutes until softened.
  3. If using, add meatless beef and sprinkle with garlic, thyme, and black pepper, cooking until browned.
  4. Remove the mushroom mixture from the pan and melt vegan butter in the same pan.
  5. Whisk in flour and cook for 1-2 minutes until lightly golden.
  6. Slowly whisk in non-dairy milk, half a cup at a time, avoiding lumps.
  7. Bring the sauce to a simmer, then stir in soy sauce and simmer until thickened.
  8. Layer the mushroom mixture in the casserole dish, top with green beans, and pour the sauce over.
  9. Cover with a layer of tater tots and bake for 30 minutes until golden brown and bubbly.
  10. Let sit for 10 minutes before serving.
