Vegan Tater Tot Green Bean Casserole

Instructions
- Preheat the oven to 375°F and lightly spray an 8x8 casserole dish with non-stick spray.
- In a medium skillet, heat olive oil and sauté onions and mushrooms with salt for 7-8 minutes until softened.
- If using, add meatless beef and sprinkle with garlic, thyme, and black pepper, cooking until browned.
- Remove the mushroom mixture from the pan and melt vegan butter in the same pan.
- Whisk in flour and cook for 1-2 minutes until lightly golden.
- Slowly whisk in non-dairy milk, half a cup at a time, avoiding lumps.
- Bring the sauce to a simmer, then stir in soy sauce and simmer until thickened.
- Layer the mushroom mixture in the casserole dish, top with green beans, and pour the sauce over.
- Cover with a layer of tater tots and bake for 30 minutes until golden brown and bubbly.
- Let sit for 10 minutes before serving.
