Baked Sweet Potato Tater Tots

Instructions
- Poke holes in the sweet potatoes and bake at 400°F (204°C) for 45 minutes to 1 hour until softened, or microwave for 5-6 minutes.
- Let the sweet potatoes cool, then prepare the coating by blending all ingredients except the butter in a food processor.
- Stream in the melted butter while mixing and adjust seasoning to taste.
- Peel the sweet potatoes, mash them roughly, and mix in cinnamon and sugar if needed.
- Chill the mixture in the fridge and preheat the oven to 375°F (190°C).
- Spray a baking sheet with nonstick spray and form the sweet potato mixture into 'tot' shapes.
- Coat the tots in the prepared mixture and place them on the baking sheet, spritzing with oil if desired.
- Bake for 20 minutes, flip, and bake for an additional 20 minutes or until desired crispiness is achieved.
