Instructions
- Heat a skillet on medium heat and add the ground meat, breaking it down as it cooks.
- Cook for 5-6 minutes until the meat is cooked through and drain any excess fat.
- Stir in the taco seasoning and mix well.
- Add the onions, salsa, and black beans, stirring to combine.
- Sprinkle in the rice and pour the broth over it, then stir again.
- Reduce the heat to low, cover the skillet, and let it simmer for 15-20 minutes until the rice is soft, stirring every 5 minutes.
- Taste the dish and adjust seasoning if needed.
- Remove from heat and sprinkle the grated cheese on top, covering the skillet to allow the cheese to melt.
- Cool slightly before serving.
