Ingredients

The main ingredients

  • 15.5 oz canned black beans (drained)
  • ½ cup salsa
  • 1 cup uncooked rice
  • cups broth
  • 1 cup grated cheese

The seasoning

  • 1 tbsp chili powder
  • 1 tsp cumin
  • ½ tsp garlic powder
  • ½ tsp smoked paprika
  • ½ tsp cayenne pepper (optional)
  • to taste salt and pepper

Optional add-ins

  • 2 tsp lime juice
  • ¼ cup chopped fresh cilantro

Instructions

  1. Heat a skillet on medium heat and add the ground meat, breaking it down as it cooks.
  2. Cook for 5-6 minutes until the meat is cooked through and drain any excess fat.
  3. Stir in the taco seasoning and mix well.
  4. Add the onions, salsa, and black beans, stirring to combine.
  5. Sprinkle in the rice and pour the broth over it, then stir again.
  6. Reduce the heat to low, cover the skillet, and let it simmer for 15-20 minutes until the rice is soft, stirring every 5 minutes.
  7. Taste the dish and adjust seasoning if needed.
  8. Remove from heat and sprinkle the grated cheese on top, covering the skillet to allow the cheese to melt.
  9. Cool slightly before serving.
